The vibrant colors of this steak and avocado salad match the weather here in Washington today. I know it’s been spring for a few weeks now, but the temperature hasn’t been showing it. At least not to me… the girl from California. Back there it has already reached the 70s and 80s. This is the first time it’s suppose to be that high, so it finally feels like spring to me, which was my motivation behind this steak and avocado salad. With no dressing, this comes out to a nice low carb lunch at 10 grams of carbs, and a nice 27 grams of protein. Keeping reading to see my dressing….  (more…)

Spinach Mushroom and Tomato Omelette

I don’t know about you, but I suck at making omelettes, plus they require my time and attention and in the morning when I’m trying to get ready, I need something quick. With these spinach, tomato and mushroom omelettes you can easily add to your meal prep day. I like to spend a few hours on Sunday prepping my food for 3 to 4 days and these don’t require any cooking while meal prepping so there’s no excuse! You can either let the ingredients sit in your refrigerator and possibly go to waste, or assemble it all in a little baggie. Makes sense. I will prep enough for up to 3 days, then while you get ready for work or school in the morning you can just throw the bag in a boiling pot of water and let it do it’s thing.

Pesto Chicken Salad

This pesto chicken salad brings all of my favorite ingredients together and is beyond filling!
The fresh cherry tomatoes are sweet and the chopped walnuts bring that crunch, while the pesto eliminates the need for any heavy dressings.
Some of my friends have been asking me for ways other than shakes to get the protein necessary after an awesome workout and I would suggest this.

Now excuse me while I finish my dinner… =]

1. I cooked the chicken my favorite way; 20 minutes, 450 degrees. I cooked my broccoli in the microwave with a little water. Cut up the chicken and toss in pesto.

2. Toss all ingredients in a large bowl, except balsamic. Add balsamic when ready to serve.
