The vibrant colors of this steak and avocado salad match the weather here in Washington today. I know it’s been spring for a few weeks now, but the temperature hasn’t been showing it. At least not to me… the girl from California. Back there it has already reached the 70s and 80s. This is the first time it’s suppose to be that high, so it finally feels like spring to me, which was my motivation behind this steak and avocado salad. With no dressing, this comes out to a nice low carb lunch at 10 grams of carbs, and a nice 27 grams of protein. Keeping reading to see my dressing….  (more…)

This is my version of a southwest chicken salad. A few weeks ago I played around with my macros because I wanted to be more consistent. I was eating pretty well and the calories were on point, but the macros some days varied greatly. Ultimate Chopped Garden Salad

Ingredients

1 cup shredded cabbage and 2 cups shredded red cabbage
2 cups mushrooms
1 cup carrots
1 orange bell pepper
1 cup grape tomatoes
1 3.8 oz can of sliced olives, drained
1 cucumber
Salt & Pepper

This is an all veggie, all chopped, rainbow colored  garden salad that you can have on the side of a steak or pork chop, or throw some grilled chicken on top and make it a meal. I like to store mine in mason jars so Robert and I can take them to work or on a hike with us. You can either fill a small jar and add lettuce later, or you can put the same size serving in a larger jar and add the lettuce now. I added 1 cup of romaine lettuce and that’s what I used for the nutritional information, but you can add whatever lettuce you want!

Cranberry Apple Chicken Salad

Ingredients

  • 7 cups spring mix
  • 2 pink lady apples, cut into cubes
  • 1/2 cup dried cranberries
  • 3/4 cup reduced fat feta
  • 12 oz cooked chicken breast

Everything I love tossed in a big bowl! This cranberry apple chicken salad is just PACKED with protein and flavor.  I used my Tangy Honey Mustard for my dressing, just throw it all together and enjoy! (more…)
