My time here in the Pacific Northwest has been flying by… it’s almost been a year and a half since I moved to the greatest place ever! So, in order to not forget another holiday, I’m preparing myself early with this red, white and blue burger. I mean… it’s already 80 degrees today. It is a hot one here in the Portland metropolitan area. If you’ve been following my health journey for a while, then you already know that I am obsessed with all things crockpot, especially this crockpot three bean chicken chili that I’m eating AS WE SPEAK!! It’s been pretty freakin’ hot this week in the Pacific Northwest, but then the rain came back, which is normal. It made me crave some chili and I just so happened to have a cabinet full of a wide variety of beans for me to choose from! I went with black, great northern and pinto. The vibrant colors of this steak and avocado salad match the weather here in Washington today. I know it’s been spring for a few weeks now, but the temperature hasn’t been showing it. At least not to me… the girl from California. Back there it has already reached the 70s and 80s. This is the first time it’s suppose to be that high, so it finally feels like spring to me, which was my motivation behind this steak and avocado salad. With no dressing, this comes out to a nice low carb lunch at 10 grams of carbs, and a nice 27 grams of protein. Keeping reading to see my dressing….  (more…)

Double Strawberry Breakfast Parfait

What makes this a double strawberry breakfast parfait, you ask? Notice the pink yogurt… I turned it strawberry flavored with my Zero Carb Isopure Strawberries and Cream protein powder. I suppose you could also just use already flavored yogurt for your strawberry breakfast parfaits, but this is my way. 🙂 With 22 grams of protein, this is a great filling breakfast that will keep you fueled for awhile. Also, this is the best granola in the entire world, hands down, no questions asked.  (more…)
