If you’ve been following my health journey for a while, then you already know that I am obsessed with all things crockpot, especially this crockpot three bean chicken chili that I’m eating AS WE SPEAK!! It’s been pretty freakin’ hot this week in the Pacific Northwest, but then the rain came back, which is normal. It made me crave some chili and I just so happened to have a cabinet full of a wide variety of beans for me to choose from! I went with black, great northern and pinto. I was eating pretty well and the calories were on point, but the macros some days varied greatly. Cranberry Apple Chicken Salad



  • 7 cups spring mix
  • 2 pink lady apples, cut into cubes
  • 1/2 cup dried cranberries
  • 3/4 cup reduced fat feta
  • 12 oz cooked chicken breast

Everything I love tossed in a big bowl! This cranberry apple chicken salad is just PACKED with protein and flavor.  I used my Tangy Honey Mustard for my dressing, just throw it all together and enjoy! (more…)

These shredded chicken tacos are full of flavors and spices and it’s so easy to make your own pico de gallo to top them off with; and that’s all you need! Yes these tacos are just tortillas, chicken, and your homemade pico. The nutritional information on the bottom is pretty pleasing as well. 🙂
