The vibrant colors of this steak and avocado salad match the weather here in Washington today. I know it’s been spring for a few weeks now, but the temperature hasn’t been showing it. At least not to me… the girl from California. Back there it has already reached the 70s and 80s. This is the first time it’s suppose to be that high, so it finally feels like spring to me, which was my motivation behind this steak and avocado salad. With no dressing, this comes out to a nice low carb lunch at 10 grams of carbs, and a nice 27 grams of protein. Keeping reading to see my dressing….  (more…)

This is my version of a southwest chicken salad. A few weeks ago I played around with my macros because I wanted to be more consistent. I was eating pretty well and the calories were on point, but the macros some days varied greatly. Strawberry Cobb Salad


This has got to be my all time favorite type of salad & the fresh strawberries at the grocery store
were calling my name this morning when I walked by. I love everything about this cobb salad from the bleu cheese crumbles to the bacon… it’s hard to resist. If you are a bleu cheese hater though, just throw on some feta or gorgonzola instead. Quick fix, no excuses. I use this salad in my sample meal prep plan because when the salad is not tossed, it seems to last a little longer. I made FOUR of these beautiful, protein packed salads to last Robert and I over the weekend. I love it when my lunch is just magically ready for me :).   (more…)

Mango Avocado Salsa & Chicken Salad




I always crave light refreshing salads during the summer and when I went to the grocery store today, the mangoes were jumping out at me, plus I had been craving pico de gallo. So tonight, we did a nice soup & salad combo with a mango avocado salsa that tasted amazing with tortilla chips as a great snack, so I made the mango salsa separately and then tossed it with the lettuce and chicken. Hit the spot!


1. First, let me tell you a little trick I learn about making the lettuce crisp and crunchy! Cut the lettuce and place it in a container with ice water. Let it sit for about 20-30 minutes, strain and let dry. We do this to our lettuce every time because it makes it taste fresh like in a restaurant.

2. While the lettuce sits in the ice water, cut the chicken into cubes and mix with 1 tsp lime juice, 1/4 cup of cilantro and a little salt & pepper.

3. Heat a pan over medium heat, about a 6 and spray with cooking spray. Cook chicken thoroughly for about 5-7 minutes to 165 degrees.

4. To make the mango salsa  toss together mango, remaining cilantro and lime (1/4 cup & 1 tsp), tomato and onion adding a little salt & pepper to taste. Before adding the avocado, I like to put pepper on it by itself so it has more flavor.

5. Next, toss in the avocado, then either eat it with chips or continue on with your salad. If so, toss into salad and then add cooked chicken.
