Southwest chicken Salad With Title

This is my version of a southwest chicken salad. A few weeks ago I played around with my macros because I wanted to be more consistent. I was eating pretty well and the calories were on point, but the macros some days varied greatly. With a little experimenting on MyFitnessPal, [see my food diary and add me here] I accidentally came up with this beauty – Southwest Chicken Salad.

Ingredients per salad:

  • 2 cups fresh spinach
  • 1 hard boiled egg
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup black beans
  • 1/4 of an avocado
  • 4 ounces of cooked chicken
  • 2 tbsp salsa (I used this as my dressing)
  • a Dash of chipotle seasoning

12 Ounces Chicken

In the beginning of out week, Robert and I have been making huge batches of chicken so we can just measure it out for whatever meal we are having it for, whether it be this salad, or our chicken, rice and veggie dinner or one of our other tasty salads.

We also keep some hardboiled eggs on hand for a quick snack, or to throw on a salad like this! So, all you have to do for this salad is hard boil your egg(s), cook your chicken, and assemble.

Shocking Eggs

I shredded all my cheese as soon as I got home from the grocery store and put in a container, so that was ready. Open and drain your can of black beans, use your 1/4 cup for this salad and store the rest.

Measuring Salsa

If you’re feeling meal preppy like I always am… you can make these salads in mason jars so you have some ready for a few days, that way you can use the entire can of black beans and the entire avocado in one prep session. Do not forget the most important piece to this salad… the chipotle seasoning. This really made the salad for me. If I’m making these to put in our lunch boxes, I put the salsa on the side in a little container so the salad doesn’t get to soggy. I recently made the switch from bleu cheese dressing, my favorite dressing in the entire world, to salsa, pico de gallo or oil and vinegar for my dressing. I think the salsa fits well on this southwest chicken salad.
