Pesto Chicken Salad


This pesto chicken salad brings all of my favorite ingredients together and is beyond filling!
The fresh cherry tomatoes are sweet and the chopped walnuts bring that crunch, while the pesto eliminates the need for any heavy dressings.
Some of my friends have been asking me for ways other than shakes to get the protein necessary after an awesome workout and I would suggest this.

Now excuse me while I finish my dinner… =]

1. I cooked the chicken my favorite way; 20 minutes, 450 degrees. I cooked my broccoli in the microwave with a little water. Cut up the chicken and toss in pesto.

2. Toss all ingredients in a large bowl, except balsamic. Add balsamic when ready to serve.


Seriously… this is so easy, you don’t have an excuse!
