Crockpot Three Bean Chicken Chili
If you’ve been following my health journey for a while, then you already know that I am obsessed with all things crockpot, especially this crockpot three bean chicken chili that I’m eating AS WE SPEAK!! It’s been pretty freakin’ hot this week in the Pacific Northwest, but then the rain came back, which is normal. It made me crave some chili and I just so happened to have a cabinet full of a wide variety of beans for me to choose from! I went with black, great northern and pinto. It does have a little kick to it with the seasoning I created. Read on to find out what’s in it. 🙂
- 1 can petite diced tomatoes
- 1 can pinto beans, rinsed
- 1 can black beans, rinsed
- 1 can great northern beans, rinsed
- 1/2 cup bell pepper, chopped
- 1/2 cup red onion, chopped
- 1/4 cup cilantro, chopped
- 1 cup chicken broth
- 1 tbsp garlic
- 1 tsp cumin
- 1 tsp chipotle powder
- 1/2 tsp chili powder
- 1/2 tsp cayenne pepper
- 1 pound chicken breast uncooked
Alright so that does look like a long looking list, but it’s still easy to do because 4 of those items are just seasonings that were in my kitchen, so maybe they’re in yours too. There are 4 cans and just need to be opened, and then beans need to be drained and that’s all the prep you have there. You do have to chop the garlic, unless you have that big see through container of chopped garlic like I do. Ha! You also have to chop the cilantro, onion and bell pepper, but that’s all the prep work broken down. Not so bad… still easy.
To make the seasoning… mix with a fork in a little bowl: 1 tsp cumin, 1 tsp chipotle seasoning. 1/2 a tsp chili powder, 1/2 a tsp cayenne pepper. Throw everything except the chicken breast into the crockpot. The chicken CAN be frozen, so obviously the weight can range a little. I would say.. nothing wrong with a little extra chicken. After you’ve mixed everything together, just place the chicken breast on top, cook on low for 6-8 hours.
When the chili is done, take 2 forks and shred in the crockpot. It will be so soft and just fall apart. You can also make this into a freezer meal by throwing everything into a ziplock bag, except the chicken broth. Flatten and write on the front, 6-8 hours, low. Cook whenever. Addition topping options: cilantro, cheese, rice, avocado, tortilla chips, chives.
