Cranberry Apple Chicken Salad



  • 7 cups spring mix
  • 2 pink lady apples, cut into cubes
  • 1/2 cup dried cranberries
  • 3/4 cup reduced fat feta
  • 12 oz cooked chicken breast

Everything I love tossed in a big bowl! This cranberry apple chicken salad is just PACKED with protein and flavor.  I used my Tangy Honey Mustard for my dressing, just throw it all together and enjoy!


I love these pink lady apples for my cranberry apple chicken salad because they’re sweet, juicy and crisp. Throwing fruit into my salads is a great way to sneak it in if you have a hard time hitting your fruit goals every day. I love veggies, but for some reason, I am never craving fruit. I do not dislike fruit! I just like muffins better. Oooops? 🙂

This salad is the perfect way to trick someone like me into loving fruit because it almost tastes like a dessert salad to me! The cranberries are super sweet. In my recipe I used the unsweetened kind; look at the sugar and calorie difference and you’ll know why.
