Cajun Chicken Caesar Jar

These Cajun Chicken Caesar Jars are perfect for lunch at home or on the go. They’re so quick and easy to make and perfect for meal prep! The chicken only takes 20 minutes to cook and I was able to prep and measure out all the other ingredients while I waited for it to finish. These are perfect for us to take in our small ice chest when we go play disc golf or hike around Portland. You can either eat it from the jar, add some dressing if you need more or even pour the jar out and make a delicious wrap; I tried this on some garlic and herb wraps – sooo good. Of course, if you don’t have mason jars you can use any contain you want to store them in. I used 4 16 ounce mason jars which made each jar only 246 calories and 36 grams of protein! If you need a bigger meal say, for your husband or boyfriend.. or yourself, just use 2 larger containers instead. Enjoy!

Ingredients
20 ounces uncooked chicken tenders
1/3 cup of Caesar vinaigrette dressing
1 bunch of green onions
1 tbsp Cajun seasoning
1/2 cup grated Parmesan cheese
1 Roma tomato
About 25-30 croutons
1 1/3 cup shredded romaine lettuce

1. Weigh out and season your thawed chicken tenders. I used my hands to rub it in evenly and then used my toaster over to bake the chicken at 450 degrees Fahrenheit for 20 minutes. Using a regular over works, it’s just a hot week here and we are avoiding using the oven! Use a foil-lined cookie sheet. While the chicken cooks, dice up your tomato and onions.

2. Once the chicken is finished, chop it up and stir with Caesar vinaigrette. Next add Parmesan cheese, green onions and tomatoes and combine well.

3. Next divide the mixture into 4 16 oz mason jars (or any container you want!) and top with a serving of croutons. This is the brand I used and a serving is 6 croutons. Finally, fill the rest of the jar with lettuce, about 1/3 a cup.
