Baked Zucchini BBQ Pizza


Just look at this pizza; it has it all! It has so much flavor from the seasoned and baked zucchini that I was able to use less cheese, making this low fat lunch or dinner the complete package. I recommend eating this pizza slowly… we devoured it at my place!

1.First you’re going to bake the zucchini; if you have a toaster oven like me, no need to preheat. If you’re using a full sized oven, preheat to 450 degrees. Cut zucchini into slices. Toss with oil then add oregano and chili flakes.

2. Place seasoned zucchini slices on foil on a baking sheet and bake for 20-25 minutes.

3. While the zucchini is baking, prepare the crust on a baking sheet with foil. As you can see, this will NOT fit in my toaster oven! I used a thin & crispy premade crust to make this as simple as possible. Spread the BBQ sauce and then the cheese. The cheese will melt to fill some of the space, I promise it is enough cheese.

4. When zucchini is done, put all the toppings on and bake for 7-10 minutes until cheese is melted and crust is crispy!
